Is there a way to do this, especially for apps from the iTunes store?
 
You mean you've never once encountered an app name you'd like to change on the springboard?
 
SSH into /Applications and change the directory name of the app you want to change the name of.

A simple 0.23 second Google would have found you this.

Does this work on apps bought from the app store?

And what terms did you type into google to find this solution? People always say to search google when someone asks something, but sometimes it's really hard to find the correct combination of terms that gets you the answer you are loking for.

PS: There is an application you can get through Cydia called "Rename" that renames apps. See here: https://forums.macrumors.com/posts/6737771/
