I have a 2012 15" MBP with optical drive, which should be going obsolete in the next few months (anyone know the precise date?). My battery is currently listed as in good health. Battery Health.app reports 87% capacity (5994 mAh) and 688 charge cycles.

I don't know much about batteries, but I've heard that they are prone to precipitous drops in capacity once they approach 1000 cycles. if I want to keep it running well for the next 4–5 years (and I suspect using it on battery power increasingly), would it behoove me to have Apple replace the battery before the machine goes obsolete? Or are my conceptions about battery decline incorrect? Alternatively, are there good ways to seek out quality battery replacements once the machine is obsolete (especially considering this is the last model that used this battery)?

A battery that is at 87% of original capacity is fine.
Not "new"... but doing well.

When it gets to 75%, start being a little concerned.

When it gets to 70%, perhaps then it's time for replacement.
