Hi all, I have this issue on the PC side as well so I am not implying this is a macOS / Mail issue.
I track my customers by company name and never enter a first or last name in contact so a typical contact for me would be:
Company A
Work: 111-111-1111
Email: contact@companya.com
Address: 111 Any Street
Address: Anytown, XX 11111
Note: Owners Name
Now most people will enter a name into their email clients as a "display name" so when they send me an email and I reply to it my contact info for them automatically updates to:
Company A
Last Name First Name
Work: 111-111-1111
Email: contact@companya.com
Address: 111 Any Street
Address: Anytown, XX 11111
Note: Owners Name
Now my contacts app organizes this contact by the last name, not the company. Does anyone know of a way to prevent this from happening?

PS - My email and contacts list are google accounts (2 different ones) managed by the apple apps
