I’ve noticed there is this setting but the option is always “immediately”. Does Anyone feel there should be a 1-5 min delay.

This is a problem If I am looking at a recipe while cooking and the screen turns off. With Touch ID it was a pain because of wet fingers. Now I have to angle my face for face for phone on the table.

When it comes to using Touch ID or Face ID then the only option available for passcode is the immediately one.
 
This option was present with Touch ID on my iPhone 6, I had it set to 4 hours. But the only option with iPhone X is immediately.

With Touch ID enabled the only passcode option that was available is the immediate one, even on iPhone 6.
 
Use the allrecipes app. It forces the screen to stay on when you have a recipe open. It's a very good app and has lots of awesome recipes. I use it all the time.

Guess I never noticed since you can authenticate while picking up w/ your finger. With the face, I've found it to be a hassle when the phone is flat on a desk or in other scenarios where it doesn't immediately authenticate.
 
Simple, just set screen auto lock to "Never" while in these situations. It's under Settings -> Display & Brightness
The problem with this is that your screen stays on forever and runs down your battery. And if you manually lock your screen you have the same issue. Let me know if I’m getting that wrong.

Yes, but the OP wants to look at their phone for recipes while cooking. So they don’t want their screen to time out and then have to re-authenticate using Touch ID. The post you quoted was a reasonable suggestion given the scenario. Also, the last post was approximately 4 months ago, so it’s likely the OP already found a solution for them.
 
I'm also annoyed by this. On my old iPad I set it to lock after 30mins (lock, not turn off screen ), but there's no way to do this on my new (and first) iphone with touch id enabled and this is super annoying.

Turn off Face ID for unlock only and you will have more options other than immediately up too 4 hrs. This drove me nuts. Works for older phones too with the fingerprint access options. No since my phone only unlocks when it wants too. I just put in the password every 4 hours if needed. I’m using an xR now but had same issue with my 8plus.
