As specified for Yosemite in this article (http://www.jklstudios.com/misc/osxfonts.html#requiredfonts), I would like to delete some of the fonts installed by El Capitan. Running MS Word (Office 2011) with so many fonts installed is painful, and disabling fonts in FontBook doesn't work either. MS Word still lists fonts that are disabled in FontBook! I may try deleting some listed in that article, probably have to disable SIP first.
Anyone have any experience with this?

The Microsoft fonts go into /Library/Fonts and then into a Microsoft fonts folder. Nothing in /Library/Fonts is protected by SIP.

You don’t have to turn off SIP, because the fonts installed in /System/Library/Fonts should not be touched. Other fonts are installed in /Library/Fonts and ~/Library/Fonts. That is where you have to delete the fonts. There are not even that many fonts in /System/Library, most of them don’t show up in your applications because they are designated for system use only.

Font Book actually has a useful function that can help: File > Restore Standard Fonts. This will move all fonts that were not installed by OS X into a separate folder in your /Library and ~/Library. Just copy the fonts you want to keep into the respective Font folder again.
