I just got a new iphone XS and i'm currently running the 12.1 beta on my iphone 7. I know i can't restore from my iCloud backup if my new device isn't on the same OS, but i'm not sure how to set my new iphone as factory settings new and running 12.1 beta.
I know I should log in with my apple ID on the new iphone and install the beta. But that's where i'm stuck. What do i do to set it up as a new iphone after?

After you have installed iOS 12.1, you can go to Settings --> Reset --> Erase All Content and Settings and then set the phone up again from new.

Thats not going to matter anyway since you seem to want to restore your 12.1 backup, whatever you do on the XS prior to that is erased. So just update it to the latest 12.1 beta and restore backup from the 7, done.
