Resetting old iPhone 3G as iPod Touch?

I just bought a new 3GS and would like to continue to use my old 3G as an iPod Touch for my daughter. Is there a way that I can set it up through iTunes as a new device so that I can sync movies and music to it? Any help would be appreciated.
