My last knowledge the only advantage a restore from iTunes will give you is:

-restore messages (not relevant any more with iCloud messages?)
-Restore app layout, pages and folders (is this outdated or will an iCloud restore the layout)

Any more advantages disadvantages?

Health data used to be one but I’m not sure now??

Both of those are/were in iCloud backups

well for the paranoid iCloud backups/usage is subject to subpoena.

I used an iCloud backup to move from an iPhone 7 to iPhone X last week, and it restored my app layout, pages and folders exactly as they were before.
