I told a friend recently that I was getting a new SE To replace my screen damaged 8, And told him it was an easy back up/restore. He said he thought I could automatically update the new phone by just switching the Sim from the old phone to the new phone… Is that correct?

I'm pretty sure you still need to setup the phone as new or from backup. You could also use quick setup by placing your old phone next to the new one and follow the prompts on the screen

Swapping a SIM card will allow the new phone to work instantly but it won't have any of your data from the old phone nor any iCloud info you keep there (maybe contacts, keychain info, pics etc) ...until you sign into iCloud

All the SIM does is identify the handset to the network operator. Moving it to the new phone will transfer telephone and data service without any carrier intervention. That's all.
