I had an appt. today at apple store to replace my iPhone, so I fully backed up last night 5/20/10, and this morning, 5/21/10, I plugged my iphone in right before the appt. to restore and it started backing up again so I stopped it, and apparently it went over the full backup I had last night, is there any way to restore the backup from the 5/20/10, so I can have all my data back, without having to jailbreak?
 
Not quite sure what you mean, can't you just right click your phone in itunes and click restore from backup and select the one you want.
If it isn't there then you're out of luck
 
when i right click and go to restore from backup it just says the iphone and the date the last backup happened, but i want the second to last backup, there isn't a list that i can pick from.
