I finally decided to update my OS just a little bit as the one I was using, Mojave, would not run a photo editing software I bought.

I did a Time Machine backup to an external hard drive and then downloaded and installed OS10.15.7 Catalina and everything works much faster BUT, I have lost a lot of my documents and desktop folder contents.

If I do a restore from that latest backup, will it revert my MBP t6o the old OS or just the files and folders?

Just files and folders. I haven't heard of Time Machine restoring an old OS.
Thanks jav, can confirm that.In fact you select the folder/area you want to restore to and when you open the backup it only shows that area. Worked a treat!
