I have a Note 3 that I never sold that I'm thinking of giving a toddler to listen to music and watch videos on. Is there a way with Android to do the following:

1. hide everything except the apps that I want visible, perhaps music player and some video player?
2. limit how long the phone can be used for at any given time?
3. What is a good video and audio player for Android these days that I can synch with my Mac?

Go to the galaxy store and download the app "kids mode" it will let you do everything you want.

I just transferred videos and music to a media card. What do I need to transfer the media from the card to the internal storage?

You should be able to do this with Samsung's own file browser.

For syncing with mac / iTunes content in future you could also use iSyncr on the device and the mac.
