I think I know what to enter for EXPERIENCE and EDUCATION, but I don't know what to enter for PROFILE.

What do you guys normally put down under PROFILE for your resume?

What do you think about the resume people on YouTube who say not to use personal pronouns like I and My ?

Don’t worry about that, it’s small matter. Some people are OK, some aren’t—what’s important is legible and eligible. Legible means resume is clear, easy to read, nicely separated sections; eligible means qualified and fit for the company and your own needs.
