I ordered an iPhone 11 Pro to replace my aging iPhone 7. I'm sad to find that it's just too heavy for me. My pinky finger is in serious pain after two days of use. So I want to return the 11 and move back to my 7.

I know I can return the phone to Apple as I only got it two days ago (via mail), but when I configured the order for the 11 I had Apple set up the transfer of the number so it was all set when I turned it on. So how do I reverse this process? Do I just swap the SIMs, sending the new phone back to Apple with my old SIM?

Take out the SIM card and put it in your old phone then send the 11 Pro back with no sim in it. I never leave the sim in a phone I'm selling, returning or gifting

Yes. Putting the SIM back into your 7 will transfer the original number back like it was before. Did you backup the 7 before switching to the 11 Pro? If you did, you should be up and running as before.
 
I didn't do an explicit backup right before, but I'm using iCloud backup on the 7 so presume it will have been close. So Apple won't balk at receiving the returned phone w/o a SIM?

No, they shouldn't. The SIM would be on no use to them anyway. The 11 Pro you send back will probably be re-sold in the on line refurbished store after Apple checks out the phone to make sure it's salable.
