The Rev C is very tempting, but I would be interested in upgrading the RAM and SSD down the road. Is that an option, and if so, would it be relatively easy?

The RAM is soldered so that's a big 'no' (and a big FO from Apple)

Swapping out storage drives will be both prohibitively expensive and extremely difficult given they currently use a rare almost proprietary connection. Only way would be via an Apple Service centre which = $$$$$$$

If you want upgradability then the 13" MBP with 256GB SSD and upto 8GB RAM is the answer.
