I am looking to follow the great lead here and start ripping my Blue-Ray disks to ATV as soon as I have either.

I live in Europe but like to watch films in their original language. Guest mostly prefer one of the european languages. Most Blue-Ray disk offer several languages.

Will I need to rip the disk several times with a different audio track, or is there a way to save disk space and create a video track and several audio tracks in one rip?

If that is possible how is ATV handling that?
 
Just use tsmuxer or handbrake to keep the audio tracks you want. HB allows up to four; tsmuxer all of them.

And there is a way to select the audio track in ATV?
Can the sound track also be selected via the REMOTE application? That would be cool.
