I just bought an RX 560 from Sapphire being certain it would work OOTB with my 5,1 and.... it doesn't at all. Even though the PCIid is 67FF the kext won't load - no display via DVI or DP and the graphics section looks like on the screenshot below. Any ideas?

I recommend you follow this guid by theitsage. Sadly AMD's latest cards aren't natively (OOTB) supported by macOS.
Yeah i was aware of that before the purchase but thought it just applies to 470/480 and 570/580. Someone even on this forum said 560 has the same id as 460 which worked OOTB and i blindly followed that. But as it appears rx 560 is 0x67FF not 0x67EF which led me to simply switching the PCI id's in AMD9510Controller.kext. But i still wonder why doesn't the AMDRadeonX4100.kext take over since 0x67FF is there already and should work?

RX 480 and RX 580 are the same GPU. (just a frequency boost). So they share the same PCIID
RX 460 and 560 are not, since they don't share the same core config. Not the same PCIID.
AMD has been pretty consistent with this over the years.
