I just checked Safari on my Mac and it shows lots of pages I visited on the iPad. Is there a way to set it up so that it only display history from the Mac? OR is there a way to tell which devices the combined history was from? Somehow sort history based on device?

On your Mac, open System Preferences, open the iCloud panel and uncheck Safari. This will un-link Safari on the 2 devices.

To clarify, I'd like to keep Safari linked on the devices, I was looking for a way to be able to see which history items were from which devices.

Sorry, I can't help much there. My only iOS device is work-supplied so I turned off linking between that and my personal computer.
