I was able to do it without a profile at all.
I used https://github.com/munki/macadmin-scripts/blob/main/installinstallmacos.py and fed it Big Sur's catalog URL:

I was looking at the beta profiles site as well, but I have a 2019 16" MBP and was reading on a different thread that some people were getting locked out of their Macs with no available way to get back in and have to provide proof of purchase to Apple. that's a mess I don't think I could afford to go through.... I'm just going to wait for the public beta. Let me know if you have tried it and what was successful/unsuccessful....
i’ve never had an issue with that website, I’ve been using it the past 2 years for iOS and WatchOS developer betas
