My iPhone 5 is jailbroken (iOS 7.0.4) and I want to update to the latest iOS. What's the safest way to do that? I know that I will lose the jailbreak, I don't mind. But I don't want to lose my apps, contacts, etc.

Back up, restore, update, install back up.

Download 7.1 IPSW for your iPhone and point iTunes to the firmware you downloaded (Shift+Restore) make sure you make full backup first.
 
Thanks for the help guys. Managed to update to iOS 7.1 without losing anything.
