Will the Note 2 have the swype keyboard?

Also how long after the release of the Galaxy note 2 will it be available handset only/unlocked?

If it doesn't have swype out of the box, you can always install it from http://www.swype.com and at least the unlocked international version is available on the day 1 when the phone is released (that supports AT&T's 3G network, but won't most likely work on their LTE network).
