I'm running a 2011 MBA and looking to buy a MBP next year as I plan to work intensively with Audio. In about 3 months I will be able to afford a M1 MBP 13". As time is not of the essence with my projects: should I wait (and save even more) for a M2 MBP 16" expected to arrive in the 2nd half of 2021? What would you do?

If you’re in no rush, may as well save and wait. Unless an M1 would improve your productivity, then it could be of value to jump in as soon as you can. That’s a personal decision.

Besides the project aspect where there's really no rush, I can afford a powerful machine only so often. So waiting for a M2 MBP 16" is probably the sensible thing to do.
