Saving Preferences before Restore and Jailbreak?

I'm planning on getting an iPhone, and I will probably buy it as a 1.1.4/1.1.5.
Before i do anything i'm going to Jailbreak. My question is, after i get all my Apps, Summerboard Preferences, WiFi settings, Contacts, etc. Am I able to save these, restore, jailbreak, and load these again?

Also, if I add contacts along the way, the computer and iPhone will sync up, but ff i add some contacts on the iPhone, and delete some as well, will it sync my Address Book to my computer and not my computer to my iPhone?

Nope, you're going to have to reinstall everything again.

You could possibly download all the application folders and reload them after you restore, but AFAIK there is no phone to computer backup for all your 3rd paty stuff.

Unfortunaley not, this would be great if we could save JB preferences as it would have saved me loads of time whenever i mess my iphone up and have to restore and re-JB!!!

What about SSH so your computer can see the iTouch files ?
