On my M2 Mac Mini Pro, after a few minutes, the screen goes off like standby mode.

I am unable to find the option to change this, as in the Energy settings, there is only this available:

Is the setting somewhere else?

Please note that I am coming from a 2009 iMac, so its a bit different for me now.

Does it restore at all? After tapping your keyboard or on its own?
How are you connected to your monitor? Mini's HDMI to monitor's HDMI? If so, try another cable - Mini's USB-C to monitor's HDMI.

I had intermittent screen off issues, too (and I looked at the obvious settings as well) - it seemed that tapping the keyboard (most often) brought it back - but this hardly a solution.

Then I found this reported on other Forums - including Apple's own - and it looks like it was a 'known issue', at least on the last OS. Solution posted by another user was to give up on Apple's HDMI and use a USB-C port instead. This has given me trouble-free connectivity, albeit using up a USB-C port when I shouldn't need to.

When I move the mouse around, or tap the keys, it comes back on. I am running some crappy HDMI adaptor that makes it 90 degrees, as its a tight fit for the moment.

I did have it on a different HDMI cable yesterday, and I believe the same thing occured.
