In that one place
I picked up a 2010 Mac Mini in my art studio I'm planning on turning into a DV/MiniDV capture device. Thanks to Macintosh Garden I ahem *archived* Final Cut Studio 3 and will be primarily using that to back up my backlog of old tapes.
This Mini will serve only as a capture device, all editing will be done on my Windows 10 computer.

I don't really want to use a KVM to connect the two and would rather just ScreenShare the Mini onto my Windows 10 computer. How would I go about doing this?

Along with @Amethyst1's suggestion, I recommend UltraVNC..

I would recommend enabling Remote Management on the Mac instead of Screen Sharing. Remote Management includes Screen Sharing. If you do not have your Mini set up to automatically login, then Screen Sharing does not kick in (it only activates when the account is logged in to). Your Mac will be stuck at the login screen without you being able to see it. With Remote Management though, you'll see the login screen.
