How secure is the built-in OSX webserver and how involved is the process for securing it enough to be safe/stable?
 
I use a mini as a web server. It's not bad. Make sure the firewall is on and only the services you absolutely need are allowed though. Make sure you have strong passwords for any and all accounts. I recommend purchasing Little Snitch. You should be pretty secure.
 
You should make sure that Apache runs in a chroot jail and also runs as its own user. Check httpd.apache.org for more details.
