If I have all the pass codes enabled on my iPhone to the 9's and someone finds it, who let's say knows their way around an iPhone. If one were to put said phone in DFU mode or restore mode when plugged into iTunes (not sure if they're the same thing, are they?) could they reset it and use it for their own purposes?
 
They don't even have to put it in DFU Mode. But, like Tallest Skil said, you can call AT&T and have them block the IMEI number. This will totally deactivate the phone and it will be bricked. You should write the IMEI number down in a safe spot. It is on the back of your iPhone's box, on the back of your iPhone and can be viewed in Settings>General>About. The easiest way to see it is in Settings>General>About.
