Hello, Presently I have a Mac Mini late 2012 running El Capitan 10.11.6 and a mac mini late 2009. Both of these are connected to a 20+ year old Dell monitor.
I want to purchase an iMAC since I would like a new monitor. My question is:

Is it possible to connect my mac minis to the new iMAC to use as a monitor?

It's not possible as the new iMacs don't support Target Display Mode. But if all you're after is a monitor, why don't you just buy a normal monitor? Lots of very good options, much cheaper than a whole computer!

Just to add a bit of information, only 27" iMacs can be used as monitors and only models from 2009 to 2014 (not Late 2014). Also support is dropped after High Sierra if i am correct. It's not a great option if you want something more up to date.
 
If the Minis have served you well, instead of an iMac, I'd suggest a 2018/20 Mini -and- a new display. Perhaps 27" and 4k, or perhaps a 32" QHD (1440p) display...
