I will be selling my wifi iPad to a friend who also has a kid.
I would like to leave the kiddie apps that are on there.
I will of course delete all my email accounts and reset settings and stuff but how exactly will this work when they plug it into their iTunes?
Will they be able to keep the kiddie apps that I left on there?

Your iPad and iPhone are linked to a specific iTunes account. Your apps may remain on the iPad so long as our friend does not connect the device to a computer. If he connects the device to the computer, the computer will replace the content on the device with the content in the iTunes account. All of your apps, documents, and other content will be deleted if the synchronization process is allowed to go forward.

The short answer to your question is: "No."
