Selling iPhone and restoring?!

Hi,

I want to sell my old iPhone, currently it is on firmware 1.1.4. I connect it to iTunes (7.7) and click Restore so I can delete all of my data and every time, iTunes wants to restore and update my firmware to 2.0. I do not want this as I just want to delete my data then jailbreak and unlock the phone.

Is there any way to override iTunes continual requests to upgrade to 2.0 so I can just Restore?
