I am selling my 2016 MacBook Pro, so I have reinstalled macOS and now it is on the Setup Assistant ready for the new owner.

However, I realise I didn't disable FileVault prior to erasing the disk and reinstalling macOS.

Will this pose a problem for the new owner?

(I did sign out of iCloud, etc.)

Nope. FileVault encrypts the disk, but if you erased the disk anyway, it doesn't matter. It likely reset to default settings and will prompt the new user to decide whether or not they want to enable it.
