Do I need to restore and then remove sim? Or do I remove sim then restore?

Also what if I don’t want to update the phone can I just erase and that’ll be fine?

Just erase all content and settings and before that turn off find my phone, log off from iCloud, App Store and that's it.

I simply erased all content and settings but when I looked on the phone obviously my number is still in there as the sim is still in the phone. So should I remove the sim first? Then erase all content and settings and everything should be removed and good to go right? It'll be on the welcome screen after this.
