Is there a way to force Messages to send a SMS to someone instead of an iMessage?

I guess I need an education on this... why would someone choose to do that?
Maybe I understand wrong, but if the recipient can accept iMessage it defaults to that
If not, it switches to SMS
If the recipient can receive iMessage, what advantage is there to sending them SMS

Maybe I don't understand how it works, so someone educate me :)

Some of my recipients have an iPhone but don't have a data plan. Wifi only. Generally if I don't see the message go through after a few seconds, on my iPhone I would click on the message to "send by text" so it reaches them.

Morpheo, yeah I'd still like to send iMessages as well as texts. Just would be nice to get a choice like on the iPhone.
