Hi,

My ex and I used to share the same AppleID on our iPhones. Is it possible that she keeps that ID and I make a new one without losing all my apps etc?

No.

You can create a new Apple ID, but you're probably going to have to call Apple if you want to sort out who owns what apps.

Family sharing.

One of you enables it and then adds a new family member. You (or her) gets the invite and that sets them up on a new Apple ID. That person then uses the new Apple ID but has access to the applications downloaded by the primary account.
