I just upgraded the processor in my Mac Pro to a 6-core Westmere and now I want to add more RAM. I remember reading somewhere that I could replace the memory (currently OG Apple 8GB) with server memory as long as I didn't mix them. I can't find the article again and I wanted to make sure before I bought more RAM.

Right now, I would like to double the RAM to 16GB.

Assume you are enquiring about used stuff?

You can search ebay for with the term PC3-10600R, I'd make sure its 1.5V and not PC3L.

2x8GB is like just over $100 if you spend some time looking.

You can't mix UDIMM and RDIMM.

If you don't care about ECC, you can use the cheaper non-ECC RAM together with the original ECC RAM, but the ECC function will be disabled.
