I’ve seen this is possible using a raspberry pi using “pi hole”. I already have a headless Mac mini on my network doing push email and file downloading and media hosting. I’d love to be able to use it to block ads accross my network including on my Apple TV so that I don’t have to buy, build, and connect another device. Is this possible? Thanks!

A lot is possible, but not everything is simple.
The pihole is just a DNS server with a regularly updated blacklist for known ad servers. If you search the web a bit I bet you can find a bunch of info on how to achieve that using a DNS server available for macOS.
Or, if you want to do it easier (?) for yourself, see if you can get a pihole docker running on the Mac; alternatively run pihole on a Linux virtual machine on your Mac.
