I have a new 24: iMac coming I ordered it with the wireless keyboard and mouse...Do I need a wired keyboard and mouse for the initial setup or can I just use the wireless Keyboard and mouse for the first time setup?

Nope. You can use the wireless devices right out of the box on a new Mac. Just install the batteries, turn on the keyboard (press and release button on the right end), turn on the mouse (small slide cover over the optical sensor on bottom) then boot up your mac. It will discover them and walk you through the rest of the setup. Did this on my new iMac and it works perfectly.
