How can I limit the number of messages displayed in my Inbox in Mail ?
 
One idea is to enable the Unread filter, so it will only display unread emails.
 
The filters WildSky mentioned are the only way to limit what you see in any particular mail folder.

A few years back I bit the bullet any moved my old Inbox mail to other folders and only left the emails that required some action.
 
Something I do:

I created a new mailbox "on my mac".
For a name, I gave it "inbox (archived)".

Now if I have mail that's "in the inbox" (i.e., also on the server with IMAP), and I don't want certain older emails to just be left "hanging around in the inbox", I drag them into the "inbox (archived)" folder.

This gets them out of the inbox, and I believe it also removes them from the IMAP server as well (could be wrong about that last part).
 
You can also create Mail Rules to automatically move unread Inbox messages to subfolders. If unread, the subfolders will indicate an unread number so you know there's new mail there.

It really depends on what your goal is and why you want to limit what you see in your Inbox.
