Is it possible to create a shortcut so that when I ask Siri "What song is this", it will automatically email me the song or similar reminder?

Open iTunes on your iPhone, tap the menu logo in the top right corner, tap on "Siri".

I probably wasn't clear... iOS 12 has the ability for shortcuts of various tasks through Siri. When I ask Siri what a song is called, is it possible to store that song name somewhere such as a reminder or email so I don't forget it?

Don't think possible as there is no "have Siri do something" method for Shortcuts. Basically one way in that Siri can only launch Shortcuts.

But LiterallySimon does give a decent workaround. Do a Siri "what song is this", then you have history of that request in iTunes under Siri tab.
