About to set up iTunes match now, does it make any difference if I leave the music on my iPhone on there or should I delete them before I activate iTunes match?

When you activate Match on you iPhone it auto deletes all iTunes synced music, so no need to.

It doesn't seem to have auto deleted everything on my iPhone. All the stuff that was there previously remains while the tracks that wern't synced show as being available in the iCloud.

Aurichie is correct that it does not delete songs off the iDevice.

OP: It doesn't matter. :) But... Keep in mind that if you don't delete them, your iPhone still has the original files so if they are a low bitrate or lossless they will remain so.
