First time iphone user, got the SE 2020 like 20 days ago, the device is on iOS 14.8 and everything (as far as I know) runs smooth.

Have heard, read about things like bugs, some issues with iOS 15 and then developers fixing it with an update.

Sorry my question sounds very stupid, is this iOS 15 upgrade like a beta, is it fully stable and to use for daily purpose?

I ask this because is this like the other platforms like Android or windows where they release beta which is full of issues, so should I upgrade to iOS 15 or remain on 14.8 ?

I had minor bugs on 14.8 and have minor bugs on iOS15. My experience with iOS15 so far has been positive, I of course can't speak for anyone else so opinions vary. One things for sure, if you update to iOS 15 you can't go back to 14.8 so you meed to be sure you're willing to take the plunge..

14.8 had a lot fewer issues. Next time around, install the last (finished) version of an iOS release in August before the new iPhones come out.
Fall, Winter is traditionally a horrible time to install a new OS because it will always have a long list of problems.

I'm necro-threading but, I'm on OP's same device, SE2020 @ 14.8.1.

Not considering the "Security fixes" and country-specific features like Apple Pay, should I upgrade?
Right now, it is 15.5. Is it friendly to battery and performance now?

I know my way with tech and not dumb enough to compromise my whole family's (devices) security that's why I don't upgrade even if there are critical security fixes.
(My wife and I are on SE2020 @ 14.8.1)
We're much more concerned with battery and performance because you know, SE2020's battery doesn't last a day outside (inside malls, commuting, using LTE).

We might upgrade iPhones soon but we're still holding onto SE2020, contemplating if we should switch to, hopefully, non-bloated Android-phone brand.

We find Apple dumb. They just kept on adding features but the quality of the releases always have issues.
And don't tell me to link what the issues are, THEY ARE EVERYWHERE! (this forum, reddit, twitter, etc).
I never had this kind of experience on my old Android phones and if there is, you can easily find the culprit and it is not the OS itself, just the apps you installed! :/ (Xperia XZ2, Samsung Note 4, and non Android: Nokia Lumia 730)

Edit:
I'm trying hard to convince myself to upgrade right now. I'm bored. I want to fiddle with something new but I might regret it later.

should I upgrade?

So I’ve got an iPhone 8+ and a regular 8. The 8+is on 14.8 and I just installed iOS 15.5 on the regular iPhone 8 yesterday. It was on 14.8 previously.

Verdict?
From a user standpoint, it’s exactly the same as iOS 14. There’s nothing significantly different about it except the weather app has changed a bit.
It might be using more battery right now but it’s a new install so there’s still indexing going on.
Not slower that I can tell. Booting up might take a few seconds longer.

Overall it’s a nothing upgrade as far as interesting features go. Might as well stay in iOS 14. I’m not going to update my 8+ to iOS 15 until the day before iOS 16 drops.
