I am sure sidecar used to work better on an earlier iOS.

I have my M1 MacBook Air (BigSur 11.6) connected to my iPad Pro 12.9 (iOS 15.1) via sidecar and it's pretty useless. Several times the blue sidecar icon will show a circular graphic and lose connectivity, even though they are side by side on my desk.

I cannot select or click on anything on the iPad with my finger. I don't have a stylus.
I can scroll up and down a website using two fingers.
Pinch and zoom works when it feels like.

I always thought sidecar was meant more as an extended display, and not to use the iPad’s touchscreen? Are you connecting over Wifi or directly with a cable?

Oh, it seems I got mixed up. I also have Duet Display which does support touch input. It's seems a bit daft that Duet Display supports touch but Sidecar does not.
