Hi

So in order to access the music and audio libraries on your computer from your iPhone you need to share the iTunes libraries in Simplify Media.

But i was curious if that was like real sharing? Can now other people that are not on my network see those libraries or would it only be possible if they had access to my network (wifi)?

You can invite up to 30 people so if done that way they can see your music and you can also see theirs.
 
The network doesn't matter. Access to your network (or any other network) would not allow anyone to see the libraries without the simplify client running on your computer and usernames added.
