My partner and I have a shared shopping list note called “shopping list”. On older versions of iOS, I could tell Siri “add bread to my shopping list note” and she would just add “bread” on a new line at the end of the note. It was a very helpful way for both of us to add items to the list and easily share the list. In iOS 15 this no longer seems to work with Siri responding that she “can’t help me with that”. Can anyone think of any reason why this feature was removed? Did anyone else use this feature?
 
It wasn’t removed. It still works perfectly fine for me on a shared note (the note is shared with me). Maybe get them to un-share it and re-share the note with you?

That is very strange it is working for you. I have tried removing/adding the note (I was the one who created it), using a note shared with me, and adding to a note that is just local to my device. In any case, Siri responds than she can’t help with that and has a prompt to open the notes app

I can confirm with the OP that it's not working. I just created a note called "Shopping List" on my iPhone and then said, "Hey Siri, add bread to my shopping list note" and Siri replies, "Sorry, I can't help with that. Let me know if you want to open the Notes app."

However, I tried saying, "Hey Siri, add bread to my shopping list" (leaving out the word "note"), and she replied, "You don't have a shopping list. Would you like to create one?" and she created a list within the Reminders app. I then said, "Hey Siri, add butter to my shopping list" and she updated the list.

So you might want to try using Reminders for this purpose instead of Notes. You can also share the list.
