I like the inclusion of Siri on the new macOS Sierra but I don't like how they have ruined the continuity of the menu bar by making the Siri icon colourful, It looks like one of those apps you install and you go - oh, its got an out-of-place looking menu bar icon... delete.

I'm pretty sure that's just a placeholder for now on the menu bar. At least I hope.
SIRI doesn't play the correct songs I tell it to in iTunes. I asked to the play the album "Zooropa" by U2 in my music library. It played a different U2 album. I asked it to play the first song on the album "Zooropa" by U2, and played a different song. I then asked it to play the song "Zooropa" by U2, and it played a completely different song ("Volcano", which doesn't even sound close).
Given that Siri is mediocre on the iPhone, I was hoping it would work better on a computer with a faster processor (Mac Mini 2015). No dice. Looks like we're back in the early 1990s for Apple, headed towards the 1997 abyss, except there's no Steve Jobs to course correct.

Agreed. Siri on the desktop was highly flouted by Apple and their key selling point for Sierra. I waited a long time for Siri to arrive, but I must say that I am highly disappointed as well. It is a half-baked, unimpressive, deficient app which should never have been let out the door yet. I think Apple jumped the gun on this one. More time in the lab would have made it so much better upon release. I don't even use Siri now.
I feel consumers and tech media alike forced Apple to rush Siri integration in OS X out the door especially once Cortana went live. That seemed like all I would read about for a while when Windows 10 came out, how MS has Cortana but Apple still hasn't integrated Siri into OS X. Plenty of threads here too.
I wouldn't expect much more from it. I've been trying to use it and like Cortana its equally as useful......or useless. The random obscure question is nice (circumference of the Earth for example) but like all assistants digital or not if you want something done right you are better off doing it yourself.
As far as the icon...I'm indifferent. I've gotten used too it but I feel it could be better too.
Oh, I am sure that competition played a role in Apple's release date for Siri, but that is just the nature of business. The bottom line often becomes the dollar sign and not quality of service, or quality in the product.
Agreed. As often as Siri gets things wrong, I can do them faster myself via the keyboard and mouse. Besides, I don't like talking to a machine anyway. I don't find it cool or hip, just weird. My regards to the crew of the Starship Enterprise.

Why haven't I set the activation by dictation for Siri as "Computer" yet?!? Most illogical.

I set mine to "Hey Siri", but I haven't used it since I realized how poorly implemented Siri is on the desktop.

Why do you feel its poorly implemented? Save the mistakes that they can fix server side how would you expect Siri to work that would be implemented better?
I'm going to attempt using Siri as much as possible the problem I'm already encountering is my work load is vague. I just don't know how I could implement it into my work flow.

Okay . . . Here is the thread where I discuss my earlier experiences with Siri.
Aside from the fact that oft times she does not understand what the speaker is saying -- twice she thought I was calling her a b*tch when I said no such thing -- currently her capabilities are very limited.
Some posters here have found justifications for Siri's limitations, but these are some very basic macOS functions and tasks which we use every single day. For example, she cannot shut down applications when you ask her to. She can not move things to the trash or empty the trash. And there were a few other basic things she could not do, which I cannot remember now. I asked her to open the Terminal app, and she showed me four online movie titles that contain the word "Terminal".
In short, I can do things faster with my keyboard and mouse, than Siri can. So why bother?
For me personally, Siri was just a selling point and eye candy, and not much more. I had high expectations. Apparently too high.
