So - despite having the phone lock on I* can:

Call people

Send texts

Have my recently received texts read back to me

Look up peoples contact details from my address book

Am I missing something - or is this a glaring security / privacy breach?

* And anybody else can that picks up my phone.

Go to Settings > General > Passcode Lock

Turn on Passcode and then set Siri to off. Problem solved. No one will be able to access Siri (or anything else) without entering the passcode.

So every time you want Siri, you have to enable it? Defeats the purpose, don't you think? Or is this automated?

On a different tack.......can you unlock your phone with Siri....by saying your lock code?

No, every time you want to use Siri (with the phone locked) you have to unlock it first and then use Siri. Just imagine iOS 4... If the phone were locked you couldn't use it before entering the passcode. Same thing with iOS 5 and Siri. Unlock it first and you're free to use.
