My iPhone 2G is unbearably slow switching between applications. Recently, the battery dies in the early evening everyday and I even have trouble receiving calls. I unlocked it myself using Pwnage 3.0. I read somewhere that if I restore as a new phone that it will clear old settings and help improve performance. My fear though is that will I then lose my notes, SMS or something else? I've been restoring from iPhone backup since v1.1.4. My contacts and calendars are already backed up on Mobile Me.

You said Pwnage so I assumed you had Jailbroken your phone.

Read up on iPhoneBrowser and then inside the var/mobile/Library are your files.

If you copy the contents of the SMS folder you can just put them back after you restore and JB again.
