I already have one on my old MacPro. I have installed El Capitan there and I can confirm it is bootable.
I would like to know if I buy another one will I be able to do software raid 0, install El Capitan on the software raid 0? And will this raid be bootable?
The way I understand it is that I will have double the bandwidth, which is good news because I am running the SM-951 @ PCi-E v1.1 4x which bottlenecks the SSD blade (see screenshot). Again I realize that I will have two SM-951 that will be bottlenecked by the interface (lol) but at least I will have twice the bandwidth.
Also, has anybody tried booting from this to windows on an old MacPro?

As far as I am aware, no. PCIe storage is seen as an external device and therefore is omitted by BootCamp. The BIOS emulation EFI does to allow Windows to boot properly also doesn't seem to like PCIe-attached storage devices.

Some people have managed to get Windows to boot via SATA-III adapters in the past though, so this may well be possible, but I was never able to get it to work.
