Hey I'm new here, so hey! :)

This afternoon I thought I would organize my music a little better in itunes, and I'm doing quite well thus far, but one thing has me puzzled.

For example, I want all songs by Justice in the same playlist, so I've set up a smart playlist so all songs by Justice are listed. Works ok, but I have other songs that are by Justice, but it's on a compilation album, so the artist would be 'VA Beats' rather than Justice for example, so the playlist wont pick it up.

Then I noticed the + button to add more preferences when creating a smart list (see picture). So I set up another and set it to find all Justice songs via 'Names'. When I save it, noting at all shows up in the playlist, but when only have it set to artist it works fine. Am I doing something wrong?

Name = Song name.

Is Justice part of the song name on compilations?

Either way, you should not have any artist fields called "Various" or similar, just use the atrist(s) name(s) and mark the album as a compilation using the "Part of Compilation" button.
 
Your current list doesn't work because it searches for songs whose name and artist both include "Justice", so unless Justice did a song called "Justice", nothing will show up.

If you edit the artist names on your compilations like Mitthrawnuruodo suggests, all the songs should appear in your smart list.
