I have a grandfathered Verizon UDP plan that has 1000 texts. Are there any apps or tweaks that can use data for sms/mms like iMessages does?

I need to be able to text people that do not have iPhones. When in large group texts it eats up 1000 messages quickly over the course of a month.
 
I understand that iMessage uses data & sms/mms uses the allotted text messages from the plan.

I am looking for a way to have sms/mms use the data plan instead of the message plan.

The only way to do that is to have everyone using an iOS device. Other than that you can't.

Maybe you can set up a google voice number and use that for messaging?
